Ingredients
8 slices of premium white or sourdough bread
8 ounces of double-smoked cheddar cheese, freshly shredded
6 slices of thick-cut smoked bacon
1 cup whole milk
2 large farm-fresh eggs
2 tablespoons butter
Salt and pepper to taste
Optional: caramelized onions, sliced jalapeños, fresh thyme
Instructions
1. Preheat oven to 375°F (190°C) and grease a large baking dish
2. Cook bacon in a cold non-stick skillet over medium heat until crispy and golden, then drain on paper towels
3. Butter one side of each bread slice
4. Layer half the bread slices (buttered side down) in the prepared baking dish
5. Sprinkle half the shredded cheddar cheese over the bread
6. Add the crispy bacon strips evenly across the cheese
7. Layer remaining bread slices (buttered side up) on top
8. In a bowl, whisk together milk and eggs with salt and pepper
9. Pour egg mixture evenly over the assembled layers
10. Top with remaining cheddar cheese
11. Bake for 25-30 minutes until golden brown and cheese is bubbling
12. Let rest for 5 minutes before serving
Notes
For best results, use day-old bread for better texture
Can be assembled 24 hours in advance – just add extra baking time if cooking from cold
