Ingredients

1 pork tenderloin (about 1.5 lbs)

4 slices of bacon, chopped

1/2 cup grated Parmesan cheese

1/4 cup breadcrumbs

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup honey

1 tablespoon Dijon mustard


Instructions

1. Preheat the oven to 375°F (190°C).

2. In a skillet, cook the chopped bacon until crispy, then remove and drain on paper towels.

3. In the same skillet, sauté garlic until fragrant, then mix in bacon, Parmesan, breadcrumbs, and parsley.

4. Butterfly the pork tenderloin and season with salt and pepper.
