Ingredients
2 lbs pulled pork (homemade or store-bought)
3 lbs russet potatoes, peeled and sliced
1 cup barbecue sauce
2 cups shredded cheese
1 tsp smoked paprika
1 tsp garlic powder
2 tbsp dark brown sugar
Salt and pepper to taste
2 tbsp olive oil
1/2 cup sour cream
Instructions
1. Preheat oven to 375°F and grease a 9×13-inch baking dish
2. Spread thin layer of barbecue sauce on bottom of dish
3. Layer half the sliced potatoes in the dish
4. Season potatoes with salt, pepper, and smoked paprika
5. Spread pulled pork evenly over potatoes
6. Sprinkle half the cheese over pulled pork
7. Add remaining potatoes in another layer
8. Top with remaining barbecue sauce and cheese
9. Cover with foil and bake for 55-60 minutes
10. Remove foil and broil for 2-3 minutes until golden
11. Let rest 10 minutes before serving
