Description

Southern Fried Pork Chops & Gravy is the ultimate comfort food dinner that captures the essence of Southern cooking. This traditional recipe features crispy, golden-brown pork chops paired with rich, creamy country-style gravy that brings families together around the dinner table.

Ingredients

Scale

6 bone-in pork chops (56 ounces each, 3/4 to 1 inch thick)

2 cups all-purpose flour

2 tablespoons garlic granules

3 teaspoons salt

1 teaspoon black pepper

1 teaspoon paprika

2 cups buttermilk

3 cups vegetable oil for frying

3 tablespoons reserved flour (for gravy)

2 cups whole milk

2 cups beef stock

1/2 teaspoon sage

Salt and pepper to taste

Instructions

1. Pat pork chops dry with paper towels and season generously with salt and black pepper. Let rest at room temperature for 15-20 minutes.

2. In a large bowl, whisk together flour, garlic granules, salt, pepper, and paprika for the breading mixture.

3. Pour buttermilk into a separate shallow dish for dredging.

4. Heat vegetable oil in a large cast iron skillet over medium-high heat to 350°F.

5. Dip each pork chop in buttermilk, then dredge in seasoned flour mixture, pressing gently to adhere.

6. Carefully place pork chops in hot oil, being careful not to overcrowd. Fry for 4-5 minutes per side until golden brown and internal temperature reaches 145°F.

7. Remove pork chops and drain on paper towels. Let rest for 3-5 minutes.

8. For gravy: Pour off all but 3 tablespoons of oil from skillet. Whisk in 3 tablespoons of reserved flour and cook for 1-2 minutes.

9. Gradually whisk in milk and beef stock, stirring constantly to prevent lumps.

10. Season with sage, salt, and pepper. Simmer until thickened, about 5-7 minutes.

11. Serve pork chops immediately with creamy gravy and classic Southern sides.

Notes

For extra tender pork chops, marinate in buttermilk for at least 30 minutes or up to 4 hours.

Use a meat thermometer to ensure pork chops reach 145°F internal temperature.

Keep oil temperature consistent at 350°F for best results.

Cast iron skillet provides the best heat distribution for even cooking.

Store leftovers in refrigerator for 3-4 days and reheat in oven to maintain crispiness.
