1 pound boneless, skinless chicken breasts

812 slices center-cut bacon

46 fresh jalapeños, seeded and diced

8 oz cream cheese, softened

1 cup sharp cheddar cheese, shredded

1 teaspoon ground cumin

1 teaspoon chili powder

1 teaspoon garlic powder

1/2 teaspoon kosher salt

1/4 teaspoon black pepper


Instructions

1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

2. Butterfly each chicken breast by slicing horizontally through the middle, leaving about 1/2 inch connected.

3. Using a meat mallet, pound chicken to approximately 1/4 inch thickness for even cooking.

4. In a mixing bowl, combine softened cream cheese, shredded cheddar, diced jalapeños, cumin, chili powder, garlic powder, salt, and pepper.

5. Spread the cheese mixture evenly over each chicken breast, leaving a 1/2 inch border around the edges.

6. Roll each chicken breast tightly, tucking in the sides to secure the filling.

7. Wrap 2-3 bacon slices around each chicken roll, ensuring complete coverage.

8. Place rolls seam-side down on the prepared baking sheet.

9. Bake for 25-30 minutes until chicken reaches internal temperature of 165°F (74°C).

10. Optional: Broil for 2-3 minutes for extra crispy bacon.

Notes

For milder heat, remove all seeds and membranes from jalapeños.

For extra spice, add cayenne pepper or leave some jalapeño seeds.
