Ingredients

8 slices thick-cut sourdough bread

8 oz sharp cheddar cheese, shredded

4 oz cream cheese, softened

46 fresh jalapeños, diced (seeds removed for less heat)

4 tablespoons unsalted butter, room temperature

6 strips crispy bacon, crumbled (optional)

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

2 green onions, chopped (optional)

Hot sauce to taste (optional)


Instructions

1. Prepare the jalapeño cream cheese mixture by combining softened cream cheese, diced jalapeños, garlic powder, and smoked paprika in a bowl

2. Mix in half of the shredded cheddar cheese and crumbled bacon if using

3. Butter one side of each bread slice generously

4. Spread the jalapeño cream cheese mixture on the unbuttered side of 4 bread slices

5. Top with remaining sharp cheddar cheese and green onions if desired

6. Place remaining bread slices on top, buttered side facing out

7. Heat cast-iron skillet or heavy pan over medium-low heat
