Ingredients
2 cups oat bran
1 1/2 cups whole wheat flour
1 cup Greek yogurt
3 fresh eggs
1/2 cup pure maple syrup
1 cup grated carrots
2 teaspoons ground cinnamon
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk (dairy or plant-based)
Instructions
1. Preheat oven to 375°F and line muffin tin with paper liners or grease well.
2. In a large bowl, whisk together oat bran, whole wheat flour, cinnamon, baking powder, and salt.
3. In separate bowl, combine Greek yogurt, eggs, maple syrup, and milk until smooth.
4. Fold in grated carrots to wet ingredients.
5. Gently combine wet and dry ingredients until just mixed – don’t overmix.
6. Fill muffin cups 2/3 full with batter.
7. Bake for 18-22 minutes or until toothpick inserted in center comes out clean.
8. Cool in pan for 5 minutes before transferring to wire rack.
