Ingredients
2 large English cucumbers
4 oz sushi-grade salmon, diced
1 ripe avocado, diced
2 tablespoons cream cheese, softened
1 tablespoon sesame seeds
1 green onion, finely chopped
1 teaspoon sriracha mayo
1 teaspoon soy sauce
1/2 teaspoon rice vinegar
1/4 teaspoon sesame oil
Nori sheets for garnish
Pickled ginger for serving
Instructions
1. Wash cucumbers and slice into 1/2-inch thick rounds
2. Use small spoon to scoop out center seeds, creating cups
3. Pat cucumber cups dry with paper towels
4. Mix diced salmon with soy sauce and sesame oil
5. Combine avocado with rice vinegar and gentle mash
6. Spread small amount of cream cheese in each cucumber cup
7. Top with salmon mixture and avocado
8. Garnish with sesame seeds, green onions, and nori strips
9. Serve immediately with sriracha mayo and pickled ginger
Notes
Use sushi-grade fish only for food safety
Cucumber cups can be prepared 2 hours ahead
Assemble just before serving to prevent soggy bottoms
