Ingredients
4–5 pounds pork shoulder
1 cup bourbon-infused BBQ sauce
12 large lasagna noodles
2 cups ricotta cheese
2 cups mozzarella cheese, shredded
1 cup Parmesan cheese, grated
2 tbsp paprika
1 tbsp garlic powder
2 tbsp brown sugar
1 cup marinara sauce
Salt and pepper to taste
Instructions
1. Season pork shoulder with paprika, garlic powder, brown sugar, salt and pepper
2. Slow-cook pork for 6-8 hours with bourbon BBQ sauce until tender
3. Shred the cooked pork and mix with additional BBQ sauce
4. Cook lasagna noodles according to package directions until al dente
5. Preheat oven to 375°F
6. Spread thin layer of ricotta cheese on each lasagna noodle
7. Add generous portion of shredded pulled pork to each noodle
8. Roll noodles tightly into cylinders and place in baking dish
9. Top with marinara sauce and remaining cheeses
10. Bake for 25-30 minutes until cheese is golden and bubbly
11. Let rest 10 minutes before serving
Notes
Pulled pork can be made up to 3 days in advance
For gluten-free version, use gluten-free lasagna noodles
Adjust spice level by modifying BBQ sauce
