Description
This viral TikTok Green Goddess Salad combines crisp vegetables with a creamy herb dressing that’s taken social media by storm. Fresh, healthy, and absolutely addictive!
Ingredients
2 cups romaine lettuce, chopped
1 large cucumber, diced
1 ripe avocado, cubed
1/2 cup fresh basil leaves
1/4 cup fresh cilantro
1/4 cup fresh parsley
2 green onions, sliced
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1/4 cup tahini or Greek yogurt
Salt and pepper to taste
1 tablespoon honey
2 tablespoons pumpkin seeds (optional)
Instructions
1. Wash and chop all vegetables and herbs, setting aside in a large mixing bowl
2. In a blender or food processor, combine basil, cilantro, parsley, green onions, olive oil, lemon juice, garlic, tahini, honey, salt and pepper
3. Blend until smooth and creamy, adding water if needed for consistency
4. Pour the green goddess dressing over the chopped vegetables
5. Toss everything together until well coated
6. Garnish with pumpkin seeds if desired
7. Serve immediately while fresh and crisp
Notes
This salad is best enjoyed fresh but can be stored in refrigerator for up to 2 days
Feel free to add your favorite protein like grilled chicken or chickpeas
The dressing can be made ahead and stored separately for up to a week
For extra crunch, add toasted nuts or seeds
