Ingredients
1 pound elbow macaroni
8 slices thick-cut bacon
1 pound ground beef (80/20 blend)
3 cups mixed cheeses (sharp cheddar, mozzarella, monterey jack)
1 cup whole milk
1/2 cup heavy cream
2 tablespoons BBQ sauce
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
1. Cook elbow macaroni according to package directions until al dente, drain and set aside
2. Cook bacon in large skillet until crispy, remove and chop, reserve 2 tablespoons bacon fat
3. Brown ground beef in bacon fat, season with garlic powder, salt and pepper, drain excess fat
4. Preheat oven to 375°F and grease 9×13 baking dish
5. Prepare cheese sauce by heating milk and cream, gradually add mixed cheeses until melted
6. Layer half the pasta in baking dish, top with beef mixture and half the cheese sauce
7. Add remaining pasta, top with remaining cheese sauce and chopped bacon
8. Bake for 25-30 minutes until golden and bubbly
9. Let rest 5 minutes before serving

Can be made ahead up to 24 hours before baking
