½ cup chicken broth (low-sodium)
1 cup long-grain white rice
2 cups water or broth (for cooking rice)
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) corn kernels, drained
1 cup cherry tomatoes, halved
1 avocado, diced
½ cup shredded cheddar jack cheese
¼ cup fresh cilantro, chopped
1 lime, cut into wedges

Instructions

  • Cook rice: Bring 2 cups water to a boil, add rice, cover, reduce heat to low, and simmer for 18 minutes. Fluff with a fork and keep warm.
  • Sauté aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until translucent (3 minutes). Add garlic and cook 30 seconds more.
  • Brown turkey: Add ground turkey, breaking it apart with a spoon. Cook 5-7 minutes until no pink remains.
