Ingredients
1 lb lean ground beef (90% lean)

2 tablespoons taco seasoning

1/2 teaspoon onion powder

Instructions
1. Preheat oven to 425°F or air fryer to 400°F
2. Cube sweet potatoes into 1/2-inch pieces for even cooking
3. Toss sweet potato cubes with olive oil, salt, and pepper
4. Roast sweet potatoes for 25 minutes in oven or 15 minutes in air fryer until crispy
5. Heat large skillet over medium heat while potatoes cook
6. Add ground beef to skillet and break into small pieces

8. Cook beef for 8-10 minutes until browned and cooked through
9. Remove from heat and let cool slightly
