Ready in just minutes with no cooking required!

Ingredients

Scale
  • 4 cups seedless watermelon, cubed
  • 1 cup cucumber, peeled and sliced
  • ½ cup crumbled feta
  • ¼ cup fresh basil leaves, torn
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons red onion, thinly sliced
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic glaze (or balsamic vinegar)
  • Zest of 1 lime
  • Juice of ½ lime
  • Pinch of sea salt

Instructions

  • Prep the fruit & veggies: Cube your watermelon into even, bite-sized pieces. Slice the cucumber thinly, peeling first if the skin is thick. Slice the red onion as thinly as possible.
  • Make the quick-pour dressing: In a small bowl, whisk together the olive oil, balsamic glaze, lime zest, lime juice, and sea salt until well combined.
  • Assemble the salad: In a chilled bowl, gently combine the watermelon, cucumber, and red onion. Sprinkle the torn basil and chopped mint over the top. Finally, add the crumbled feta cheese.
  • Dress & delight: Just before serving, drizzle the dressing over the salad and toss very gently to coat all ingredients without breaking them. Serve immediately for the freshest experience.

Notes

  • For best presentation, reserve a small amount of feta, herbs, and watermelon to sprinkle on top after tossing.
  • Block feta packed in brine offers better flavor than pre-crumbled varieties.
  • To prevent a watery salad, place cut watermelon on paper towels briefly before assembling.
  • This salad is best consumed immediately after preparation as the ingredients will release moisture over time.
  • For a complete meal, serve over a bed of arugula or add grilled chicken or shrimp.
