Description
A savory and sweet dish combining pork loin with the rich flavors of whiskey and apples, complemented by caramelized shallots and herb butter.
Ingredients
2 lbs pork loin
1 cup apple cider
1/4 cup whiskey
2 tablespoons olive oil
2 tablespoons brown sugar
Salt and pepper to taste
4 shallots, sliced
4 tablespoons unsalted butter
2 tablespoons fresh thyme, chopped
2 tablespoons fresh rosemary, chopped
Instructions
1. Preheat the oven to 375°F (190°C).
2. Season the pork loin with salt and pepper.
3. In a large skillet, heat olive oil over medium-high heat. Sear the pork loin on all sides until browned.
4. Remove the pork from the skillet and set aside.
5. In the same skillet, add sliced shallots and cook until caramelized, about 5-7 minutes.
6. Add apple cider, whiskey, and brown sugar to the skillet; stir to combine.
7. Return the pork loin to the skillet, spooning some of the sauce over it.
8. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the internal temperature of the pork reaches 145°F (63°C).
9. While the pork is roasting, prepare the herb butter by mixing butter with thyme and rosemary in a bowl.
10. Once the pork is done, let it rest for 10 minutes before slicing.
11. Serve the sliced pork with the caramelized shallots and a dollop of herb butter.
Notes
This dish pairs well with mashed potatoes or sautéed greens. Adjust the sweetness of the sauce by adding more or less brown sugar based on your preference.
