Ingredients
2 pounds ground beef (80/20 lean-to-fat ratio)
1/2 pound ground pork
1 cup breadcrumbs
2 large eggs
1/4 cup milk
10 bacon strips for weaving
1/2 cup bourbon whiskey
1 cup BBQ sauce (homemade or store-bought)
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
Instructions
1. Preheat oven to 375°F and line baking sheet with parchment paper
2. In large bowl, gently mix ground beef, pork, breadcrumbs, eggs, milk, salt, pepper, garlic powder, and onion powder
3. Shape meat mixture into loaf form on prepared baking sheet
4. Create bacon weave by laying 5 bacon strips horizontally, then weaving 5 strips vertically over and under
5. Wrap bacon weave around entire meatloaf, tucking ends underneath
6. In small saucepan, combine bourbon whiskey and BBQ sauce, simmer for 5 minutes to cook off alcohol
7. Bake meatloaf for 30 minutes, then brush with whiskey BBQ glaze
8. Continue baking 15-20 minutes until internal temperature reaches 160°F
9. Rest for 10 minutes before slicing and serving

Let meatloaf rest to retain juices and prevent crumbling
