Description
A rich, bacon-wrapped meatloaf glazed with a bold whiskey-maple sauce for the perfect sweet and savory comfort dish.
Ingredients
2 lbs ground pork
8 slices thick-cut bacon
1 medium onion, diced
1 green bell pepper, diced
1 cup breadcrumbs
2 eggs
1/2 cup brown sugar
1/4 cup maple syrup
1/4 cup bourbon whiskey
1 tsp dry mustard
Salt and pepper to taste
Fresh thyme and parsley (optional)
Instructions
1. Preheat oven to 350°F (175°C).
2. Sauté onions and garlic until soft and golden.
3. In a large bowl, mix ground pork, sautéed onions, breadcrumbs, eggs, herbs, salt, and pepper.
4. Fold in chopped crispy bacon.
5. Shape into a loaf and wrap in bacon strips.
6. In a saucepan, combine maple syrup, brown sugar, bourbon, and dry mustard. Simmer until thickened.
7. Brush glaze over meatloaf generously.
8. Bake for 60–75 minutes, or until internal temp hits 160°F.
9. Let rest 10–15 minutes before slicing.
Notes
You can prepare the loaf a day in advance and store it chilled until ready to bake.
For a gluten-free version, substitute with gluten-free breadcrumbs or crackers.
