Ingredients
1 cup quinoa
1 can chickpeas, drained and rinsed
1 bell pepper, diced
1 cucumber, diced
1 cup cherry tomatoes, halved
1/4 red onion, finely chopped
1/4 cup parsley, chopped
1/4 cup olive oil
Juice of 1 lemon
Salt and pepper to taste
Instructions
1. 1. Rinse the quinoa under cold water and cook according to package instructions.
2. 2. In a large bowl, combine cooked quinoa, chickpeas, bell pepper, cucumber, cherry tomatoes, red onion, and parsley.
