Ingredients

1 cup cooked quinoa

1/2 cup black beans, rinsed and drained

1/2 cup corn, frozen or fresh

1/4 cup red bell pepper, diced

1/4 cup green onion, chopped

1/4 cup cilantro, chopped

1/2 teaspoon cumin

1/2 teaspoon chili powder

1/4 teaspoon garlic powder

Salt and pepper to taste

1/4 cup breadcrumbs

1 egg, beaten


Instructions

1. Preheat the oven to 375 degrees F (190 degrees C).

2. In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, green onion, and cilantro.
