Ingredients
1 pint fresh cherry tomatoes
8 oz fresh mozzarella balls (bocconcini)
1/2 cup fresh basil leaves
1/4 cup extra virgin olive oil
2 tablespoons balsamic glaze
1/2 teaspoon sea salt
1/4 teaspoon freshly ground black pepper
20–25 bamboo skewers or toothpicks
Instructions
1. Wash and thoroughly dry all cherry tomatoes and fresh basil leaves
2. Drain mozzarella balls and pat dry with paper towels
3. If using large cherry tomatoes, cut them in half; leave small ones whole
4. Thread one cherry tomato onto each skewer
5. Add one mozzarella ball to each skewer
6. Fold one basil leaf and thread onto skewer
7. Arrange completed skewers on serving platter
8. Drizzle lightly with extra virgin olive oil
9. Season with sea salt and freshly ground black pepper
10. Drizzle with balsamic glaze just before serving
11. Garnish platter with additional fresh basil leaves if desired
