Instructions

1. Season pork chops generously with salt, pepper, cinnamon, and nutmeg

2. Heat olive oil in large skillet over medium-high heat

3. Sear pork chops for 2-3 minutes on each side until golden brown

4. Transfer to preheated 375°F oven and cook for 15-20 minutes until internal temperature reaches 145°F

5. For glaze: Combine apple cider, whiskey, and brown sugar in saucepan

6. Bring mixture to boil, then reduce heat and simmer until thickened (about 10 minutes)

7. Add allspice and remaining spices, simmer 2-3 minutes more

8. Remove from heat and whisk in butter until smooth and glossy

9. Brush glaze over pork chops during last 5 minutes of cooking

10. Let rest 5 minutes before serving with remaining glaze

Notes

For best results, use thick-cut, bone-in pork chops for maximum juiciness.

Apple whiskey adds unique flavor, but regular whiskey works well too.

Glaze can be made up to 2 days ahead and reheated before use.
