Description
Juicy gourmet meatloaf with Swiss cheese, caramelized onions, and bacon for a family favorite dinner.
Ingredients
1 lb ground beef (80/20)
1 lb ground pork
1 cup caramelized onions
1 cup Swiss cheese, shredded
8 slices thin-cut bacon
2 large eggs
1 cup fresh breadcrumbs
Salt & pepper to taste
Instructions
1. Preheat oven to 350°F.
2. Caramelize onions in butter over low heat.
3. Mix beef, pork, breadcrumbs, eggs, and seasonings.
4. Gently fold in caramelized onions and Swiss cheese.
5. Shape into a loaf, place on baking sheet.
6. Wrap with overlapping bacon slices.
7. Bake 60–65 minutes or until internal temp is 160°F.
8. Rest for 10 minutes before slicing and serving.
Notes
Caramelize onions in advance for convenience.
Substitute Swiss with cheddar or gouda for variety.
Pairs well with mashed potatoes and red wine.
