FOR THE SMOKY BACON JAM:

8 slices thick-cut bacon, chopped

1 large yellow onion, diced

3 cloves garlic, minced

1/4 cup brown sugar

2 tablespoons balsamic vinegar

1/4 teaspoon smoked paprika

FOR ASSEMBLY:

4 brioche burger buns (carved with jack-o’-lantern faces)

8 slices pepper jack cheese

4 lettuce leaves

4 tomato slices

4 tablespoons mayonnaise

Pickles (optional)


Instructions

1. MAKE THE SMOKY BACON JAM: In a large skillet over medium heat, cook chopped bacon until crispy (8-10 minutes). Remove bacon with slotted spoon and set aside, leaving 2 tablespoons bacon fat in pan.

2. In the same skillet with bacon fat, add diced onions and cook until caramelized (12-15 minutes), stirring occasionally. Add minced garlic and cook 1 minute until fragrant.

3. Return cooked bacon to skillet. Add brown sugar, balsamic vinegar, and smoked paprika. Simmer on low heat for 10 minutes, stirring occasionally, until mixture thickens into jam consistency. Set aside to cool.

4. PREPARE THE BURGER PATTIES: In a large bowl, combine ground beef, minced ghost peppers, chopped onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper. Mix gently with hands until just combined (do not overmix).

5. Divide mixture into 4 equal portions and form into patties slightly larger than your buns (they’ll shrink during cooking). Create a small indent in center of each patty with your thumb to prevent bulging.

6. GRILL THE BURGERS: Preheat grill to medium-high heat (400°F). Oil grill grates to prevent sticking.

7. Place burger patties on hot grill and cook for 4-5 minutes without moving (for medium doneness). Flip burgers and immediately top each with 2 slices pepper jack cheese. Cook additional 4-5 minutes until cheese melts and internal temperature reaches 160°F.

8. Toast burger buns on grill for 1-2 minutes until lightly golden.

9. ASSEMBLE THE BURGERS: Spread mayonnaise on bottom bun. Layer with lettuce, tomato, grilled burger patty with melted cheese, generous spoonful of smoky bacon jam, and top bun (carved with jack-o’-lantern face). Serve immediately with pickles if desired.
