Ingredients
2 packages instant ramen noodles (discard seasoning packets)
4 large eggs
1/2 cup grated Parmesan cheese
4 strips thick-cut bacon, diced
2 cloves garlic, minced
1/4 cup heavy cream
2 green onions, sliced thin
1/4 teaspoon black pepper
Salt to taste
1 tablespoon olive oil
Instructions
1. Cook ramen noodles according to package directions, drain and set aside
2. In a large bowl, whisk together eggs, Parmesan cheese, heavy cream, and black pepper
3. Cook diced bacon in a large skillet over medium heat until crispy, about 6-8 minutes
4. Add minced garlic to bacon and cook for 30 seconds until fragrant
5. Add cooked ramen noodles to the skillet with bacon and toss to combine
6. Remove skillet from heat and quickly pour in egg mixture, tossing constantly to create creamy sauce
7. Season with salt and pepper to taste
8. Garnish with sliced green onions and additional Parmesan cheese
9. Serve immediately while hot and creamy
Notes
Work quickly when adding egg mixture to prevent scrambling
Save some pasta water if sauce needs thinning
For extra richness, add an additional egg yolk
Best served immediately for optimal creaminess
Can substitute pancetta for bacon if preferred
