Ingredients

4 lbs pork roast

1 cup apple cider

1/2 cup bourbon

1/4 cup brown sugar

2 tablespoons Dijon mustard

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon olive oil

2 apples, sliced

1 onion, quartered


Instructions

1. Preheat the oven to 325 degrees F.

2. In a large skillet, heat olive oil over medium-high heat. Sear the pork roast on all sides until browned.

3. In a bowl, mix apple cider, bourbon, brown sugar, and Dijon mustard.

4. Place the seared pork in a roasting pan and pour the cider mixture over it.
