Ingredients
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 3/4 cups milk
2 large eggs
3 tablespoons melted butter or vegetable oil
8 slices thick-cut bacon
1/4 cup pure maple syrup
6 large fresh eggs for scrambling
2 tablespoons butter for cooking eggs
1 cup shredded cheddar cheese
1/4 cup chopped green onions
Hot sauce to taste
1/2 cup sour cream
2 ripe avocados, sliced
Optional: 2 tablespoons chopped chives
Optional: 1/2 teaspoon garlic powder
Optional: 1/4 teaspoon black pepper
Instructions
1. Prepare pancake batter by whisking together flour, baking powder, and salt in a large bowl. In separate bowl, combine milk, 2 eggs, and melted butter. Add wet ingredients to dry ingredients, stirring until just combined (don’t overmix).
2. Heat Blackstone griddle or large non-stick skillet to medium heat. Lightly spray with cooking oil.
3. Cook thick-cut bacon until crispy, brushing with maple syrup during last 2 minutes of cooking. Remove and keep warm.
4. Pour pancake batter onto griddle to make thin, flexible pancakes about 6-7 inches in diameter. Cook until bubbles form on surface, then flip and cook until golden brown.
5. In another pan, scramble 6 eggs with butter until soft and creamy. Season with salt and pepper.
6. Warm pancakes briefly if needed. Place each pancake on serving plate.
7. Fill center of each pancake with scrambled eggs, 1-2 pieces of maple bacon, shredded cheese, and desired toppings.
8. Fold pancake sides up to form taco shape, leaving top open for additional toppings.
9. Serve immediately with extra maple syrup, hot sauce, sour cream, and avocado slices on the side.
Notes
For best results, make pancakes slightly thicker than traditional pancakes to hold fillings properly.
Pancake batter can be prepared night before and stored in refrigerator.
