Description

Savory and sweet, these Spiced Pumpkin Whiskey Chicken Thighs are marinated in a flavorful blend of spices and whiskey, then drizzled with a rich maple butter sauce for a perfect fusion of tastes.


Ingredients

4 chicken thighs, bone-in and skin-on

1 cup pumpkin puree

1/4 cup whiskey

2 tablespoons maple syrup

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon cayenne pepper (optional)

2 tablespoons olive oil

2 tablespoons butter


Instructions

1. 1. In a bowl, mix the pumpkin puree, whiskey, maple syrup, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.

2. 2. Place the chicken thighs in a large zip-top bag or bowl and pour the marinade over them. Seal or cover and refrigerate for at least 1 hour, preferably overnight.

3. 3. Preheat the oven to 400°F (200°C).

4. 4. In an oven-safe skillet, heat the olive oil over medium-high heat. Remove the chicken from the marinade and sear them skin-side down for about 5 minutes until crispy.

5. 5. Flip the chicken thighs over, then transfer the skillet to the preheated oven. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).

6. 6. While the chicken is baking, melt the butter in a small saucepan over low heat. Stir in the remaining marinade and simmer for 5-7 minutes until thickened.

7. 7. Drizzle the maple butter sauce over the chicken before serving. Enjoy!

Notes

For added flavor, let the chicken marinate overnight.

Feel free to adjust the spice level by increasing or decreasing the cayenne pepper.
